This is my pride and joy. I've had it everyday for breakfast for the past 2 years and It's never failed me. You can get potatoes in bulk for pretty cheap and the other ingredients are easy and last long too. You can make it in 8 minutes, it's customisable and most importantly it tastes awesome.
Ingredients
- One Russet Potato
- Scallion/Green Onion (Don't use chive seasoning btw)
- Cheddar Cheese
- Hot Sauce (Optional)
- Butter
Chive time
Chives are essential to this. I like to buy a couple scallions and chop them up, store them, and use them for the next week or two. Just chop the green (not white) part into small pieces shouldn't be too hard.
Prepare the Potato
Wash the potato under water. Dry it off, and put it on a plate on top of a paper towel. Rotate the potato, and poke holes into each side with a butter knife (No pattern, I just poke wherever)
Put it in the Microwave for 6:00 minutes (Less or more depending on size. If the inside if hard/not soft, put it in longer)
When its done, cut it in half and slightly mash the insides. It should already be pretty soft.
The Essentials
Put some Butter in it. Just eyeball it. Take a fork and mash it inside the potato.
Add some cheddar cheese to your liking
Sprinkle some fresh chives on top
Optionally add Hot Sauce if you like that.
AND NOW. You have a full, healthy, tasty breakfast in 8 minutes (feels like 2 cause you spend 6 waiting)
